Snickerdoodles

Ingredients
1 ½ cups sugar ½ cup butter, softened ½ cup shortening 2 eggs 2 ¾ cups all-purpose flour 2 teaspoons cream of tartar 1 teaspoon baking soda ¼ teaspoon salt 2 Tablespoons sugar (to roll dough in) 2 teaspoons ground cinnamon (to roll dough in)
Directions
Pre-heat oven to 400ºF. Mix sugar, butter, and shortening in a large bowl with a hand mixer. Add eggs and mix together with hand mixer until creamy. Mix flour, cream of tartar, baking soda and salt together in a medium mixing bowl. Add flour mixture to the bowl with the sugar, butter and egg mixture. Mix with a wooden spoon until thoroughly combined. (Chill in fridge or freezer for a few minutes, if time allows.) Shape dough into 1 ½-inch balls. Mix 2 tablespoons sugar and the 2 teaspoons cinnamon in a small bowl for rolling balls in. Roll balls in cinnamon-sugar mixture. Place 2 inches apart on ungreased cookie sheet. Bake 8 to 10 minutes or until set. Remove from cookie sheet to wire rack.
