Tuna Timbales
Rasband Family Recipe
Ingredients
- 2 - 7 ounce cans white tuna, drained
- 1 large onion, diced
- 3 tablespoons vegetable oil
- 6 beaten eggs yolks and white separated
- 4 cups bread cubes
- 1 tablespoon lemon juice
- 1 tablespoon minced parsley
- Salt and pepper
- 2 cups white sauce
Directions
- Add vegetable oil to a large sautéing pan on medium heat; Add tuna, and onion and cook until onion is tender.
- In a large mixing bowl, add tuna mixture, egg, lemon, parsley and salt and pepper. Mix well.
- Stiffly beat the egg whites and then fold into tuna mixture.
- Evenly distribute between 12 muffin tins.
- Bake in oven at 350° until firm, about 30 minutes.
- Serve with white sauce and minced parsley for garnish.
