Oven Puffed Pancake


Ingredients

  • 1 cup all-purpose flour
  • 1 cup milk
  • ¼ cup granulated sugar
  • ¼-½ teaspoon salt
  • 3 large eggs
  • 2 tablespoon butter
  • Powdered sugar (optional)

Directions

  1. Preheat oven to 450°.
  2. Lightly spoon flour into a dry measuring cup; level with a knife.
  3. Combine flour and next 5 ingredients (flour through egg); stir until moist.
  4. Melt butter in the oven in a 9 X 13 inch pan.
  5. Pour batter into pan.
  6. Bake at 425° for 15-18 minutes or until golden and sides are “puffed.”
  7. Sprinkle with powdered sugar, if desired.
  8. Cut into quarters; serve immediately with fresh fruit, maple syrup and/or jam.
