Oven Puffed Pancake
Ingredients
- 1 cup all-purpose flour
- 1 cup milk
- ¼ cup granulated sugar
- ¼-½ teaspoon salt
- 3 large eggs
- 2 tablespoon butter
- Powdered sugar (optional)
Directions
- Preheat oven to 450°.
- Lightly spoon flour into a dry measuring cup; level with a knife.
- Combine flour and next 5 ingredients (flour through egg); stir until moist.
- Melt butter in the oven in a 9 X 13 inch pan.
- Pour batter into pan.
- Bake at 425° for 15-18 minutes or until golden and sides are “puffed.”
- Sprinkle with powdered sugar, if desired.
- Cut into quarters; serve immediately with fresh fruit, maple syrup and/or jam.
