Old Fashioned Rice Pudding


Ingredients

  • 2 eggs
  • ½ cup sugar
  • ½ cup raisins
  • 2 cups milk
  • ½ teaspoon vanilla
  • ¼ teaspoon salt
  • 2 cups hot cooked rice
  • Ground cinnamon and nutmeg

Directions

  1. Heat oven to 325°F.
  2. Beat eggs in uncreased 1 ½ quart casserole.
  3. Stir in sugar, raisins, milk, vanilla, cinnamon, salt and hot rice.
  4. Sprinkle with nutmeg.
  5. Bake uncovered 50-60 minutes, stirring occasionally, until knife inserted halfway between center and edge comes out clean.
  6. Serve warm or cold and, if desired, with cream.
  7. Refrigerate any remaining pudding.
