Old Fashioned Rice Pudding
Ingredients
- 2 eggs
- ½ cup sugar
- ½ cup raisins
- 2 cups milk
- ½ teaspoon vanilla
- ¼ teaspoon salt
- 2 cups hot cooked rice
- Ground cinnamon and nutmeg
Directions
- Heat oven to 325°F.
- Beat eggs in uncreased 1 ½ quart casserole.
- Stir in sugar, raisins, milk, vanilla, cinnamon, salt and hot rice.
- Sprinkle with nutmeg.
- Bake uncovered 50-60 minutes, stirring occasionally, until knife inserted halfway between center and edge comes out clean.
- Serve warm or cold and, if desired, with cream.
- Refrigerate any remaining pudding.
