Creamy Cajun Chicken Pasta


Ingredients

  • 1 ½ pounds chicken breast, cut into thin strips
  • 12 ounces linguine, cooked al dente
  • 2 tablespoons cajun seasoning
  • 4 tablespoons butter
  • 3 thinly sliced green onions
  • 1 cup heavy whipping cream
  • ½ cup milk (2% or whole)
  • ⅓ cup chopped sun-dried tomatoes
  • ¾ teaspoon salt
  • 1 teaspoon dried basil
  • ½ teaspoon ground black pepper
  • ½ teaspoon garlic powder
  • ½ cup grated parmesan cheese

Directions

  1. Place chicken and Cajun seasonings in a bowl and toss to coat.
  2. Heat a large skillet over medium heat, melt butter in pan and sauté chicken until it is cooked through, about 5-7 minutes.
  3. Reduce heat and add green onions, heavy cream, milk, tomatoes and seasonings.
  4. Stir together and simmer for 5 minutes.
  5. Add linguine to sauce and toss to coat.
  6. Serve with parmesan cheese sprinkled on top.
