Celery Soup

Ingredients

  • 2 tbsp olive oil or butter
  • 1 onion
  • 4 garlic cloves
  • 6 c celery
  • 2 c potatoes
  • 4 c stock
  • 1 c water
  • 1 bay leaf
  • 1 tsp salt
  • 0.5 tsp pepper
  • 0.125 tsp cayenne pepper (optional)
  • 0.25 c fresh dill (optional)
  • 0.5 c fresh parsley (optional)
  • 0.5 c sour cream or yoghurt

Directions

  1. Dice onion.
  2. Slice celery thinly.
  3. Dice potatoes into chunks.
  4. Roughly chop or mince garlic.
  5. Add onion to heated oil in pot, stir until golden.
  6. Add garlic, cook 1-2 min until fragrant.
  7. Add celery, potatoes, broth, water, bay leaf, salt, pepper, and cayenne.
  8. Cover, bring to boil, then simmer 10 min until potatoes are tender.
  9. Remove bay leaf, add herbs.
  10. Blend until smooth.
  11. Add sour cream or yoghurt over low heat.
