Bacon Pear and Gorgonzola Salad


Ingredients

  • 8 ounces Spring Mix Lettuce
  • 2 pears, sliced
  • ½ cup pecans
  • ½ cup dried cranberries
  • ½ cup crumbled Gorgonzola cheese
  • 8 slices bacon
  • ½ cup extra virgin olive oil
  • ⅓ cup balsamic vinegar
  • 1 tablespoon shallot, minced
  • 2 teaspoons dijon mustard
  • 2 teaspoons granulated sugar
  • ½ teaspoon salt
  • fresh ground pepper

Directions

  1. Toast pecans on a baking sheet for 5 minutes at 350 degrees F.
  2. Cook the bacon in a fry pan or bake on a rimmed baking sheet lined with parchment paper at 400 degrees for 20 minutes or until done. Drain on a paper towel lined plate, let cool completely, and dice.
  3. Combine all the dressing ingredients in a jar with a lid and shake well.
  4. In a bowl, place the lettuce, pecans, cranberries, cheese, and bacon. When ready to serve, add the pears and dressing and toss. Serve immediately.
