Aunt Mj's Minestrone Soup


Ingredients

  • 1 ½ pounds bulk hot Italian sausage
  • 1 large can tomato puree
  • 2 small cans tomato sauce
  • 1 quart water
  • 1 can beef broth
  • 2 stalks celery, diced
  • 2 carrots, sliced
  • 2 onions, diced
  • 1 or 2 cloves garlic, minced
  • 1 teaspoon oregano
  • 1 teaspoon basil
  • 1 tablespoon parsley flakes or fresh
  • Salt and pepper to taste
  • 1 cup frozen green beans, cut
  • 1 can kidney beans, drained
  • 1 cup any kind of pasta, uncooked

Directions

  1. Cook sausage and drain oil; Set aside.
  2. Saute celery, carrots, onions and garlic a large pot for 3-4 minutes.
  3. Add remaining ingredients to the pot and simmer for about 6 hours.
  4. Add cut green beans, kidney beans and noodles. Cook until noodles are cooked al dente.
