Aunt Mj's Minestrone Soup
Ingredients
- 1 ½ pounds bulk hot Italian sausage
- 1 large can tomato puree
- 2 small cans tomato sauce
- 1 quart water
- 1 can beef broth
- 2 stalks celery, diced
- 2 carrots, sliced
- 2 onions, diced
- 1 or 2 cloves garlic, minced
- 1 teaspoon oregano
- 1 teaspoon basil
- 1 tablespoon parsley flakes or fresh
- Salt and pepper to taste
- 1 cup frozen green beans, cut
- 1 can kidney beans, drained
- 1 cup any kind of pasta, uncooked
Directions
- Cook sausage and drain oil; Set aside.
- Saute celery, carrots, onions and garlic a large pot for 3-4 minutes.
- Add remaining ingredients to the pot and simmer for about 6 hours.
- Add cut green beans, kidney beans and noodles. Cook until noodles are cooked al dente.
