Old-Fashioned Rice Pudding

Ingredients

2 eggs ½ cup sugar ½ cup raisins 2 cups milk ½ teaspoon vanilla ¼ teaspoon salt 2 cups hot cooked rice Ground cinnamon and nutmeg

Directions

Heat oven to 325°F. Beat eggs in uncreased 1 ½ quart casserole. Stir in sugar, raisins, milk, vanilla, cinnamon, salt and hot rice. Sprinkle with nutmeg. Bake uncovered 50-60 minutes, stirring occasionally, until knife inserted halfway between center and edge comes out clean. Serve warm or cold and, if desired, with cream. Refrigerate any remaining pudding.
