Mom's Scones

Prep: 10 minutes/+1 hour rise time Cook: 2-3 minutes Servings: 8

Ingredients

½ cup warm water ½ cup warm milk 2 teaspoons dry active yeast 5 teaspoons granulated sugar 2 tablespoons melted butter, cooled 1 ½ teaspoons salt 2 ½-3 cups bread flour Vegetable oil for deep frying

Directions

Combine warm water and warm milk.  Stir in the sugar.  Add dry active yeast and stir lightly.  Allow yeast to activate, about 10 minutes. In a stand mixer, fitted with a bread hook, add milk mixture and melted cooled butter.  Add the salt.  Start the mixer and add the flour one cup at a time until the dough pulls away from the sides of the bowl.  Dough should be slightly sticky but workable. Cover the dough in the bowl with a towel.  Set in a warm place and allow raise until double. Pour your oil in a large pan (with sides deep enough to fully immerse the scones) or a deep fryer and heat slowly over medium to medium high heat. While the oil is heating, roll the dough out onto the counter, without flour, into a large rectangle about ½ inch thick.  You may choose to butter the counter lightly.  Using a pizza cutter, cut into squares or triangles. Heat oil to between 350-400°F and cook scones until golden brown.  Serve immediately.


Homemade Utah Scones Prep: 10 minutes Cook: 2-3 minutes Servings: 12

 

Ingredients

1 cup water, hot 1 tablespoon active dry yeast 1/3 cup oil or melted shortening 1 teaspoon salt 1/4 cup sugar 3 1/2 cups flour, sifted 1 egg 2 quarts frying oil

Directions

Mix 3 tablespoons of warm water with yeast adding a pinch of sugar. Set aside for 10 minutes for yeast to activate and foam. In the meantime, combine hot water, oil (or melted shortening), salt, and sugar in a large bowl. Once the yeast has activated, add egg to the yeast mixture. Mix well. Add the egg/yeast mixture to the oil/sugar mixture. Stir well. Gradually add flour stirring well after each addition. Knead the dough as it stiffens until you get a doughy, elastic consistency. About 10 minutes. Place dough in a well-greased bowl, turning once to grease the top. Let dough rise for about 45-60 minutes or until double in size. Line a plate with paper towels and set aside. Fill a large sauce pan with 2 inches of oil and heat to 350-375°F over medium-high heat. Or heat oil in a deep fryer. Once temperature is reached, reduce heat slightly. Meanwhile, punch down dough and divide into 12 balls. Roll out a piece of dough on a lightly floured surface into ¼-inch thick circles or squares. You can use your fingers to stretch out the balls of dough. We like ours thick! Carefully place two or three balls of dough in the oil and fry until golden brown on each side (about 1-2 mins). Transfer to paper towels to drain. Repeat until the dough is all fried. Serve hot with honey-butter, pure maple syrup, or powdered sugar.
