Granola

6 cups rolled oats 1 cup coarsely chopped pecan 1 cup coarsely chopped cashews 1 ½ cup shredded sweet coconut ½ cup dark brown sugar ½ cup maple syrup ½ cup vegetable oil ¼-½ cup water 1 teaspoon salt 1 cup raisins
Directions
Preheat oven to 250° F. In a large bowl, combine the oats, nuts, coconut, and brown sugar.In a separate bowl, combine maple syrup, oil, water and salt. Combine both mixtures and pour onto 2 sheet pans. Cook for 1 hour and 15 minutes, stirring every 15 minutes to achieve an even color. Remove from oven and transfer into a large bowl. Add raisins and mix until evenly distributed.

Ingredients
6 cups rolled oats ½-1 cup combination of sesame, pumpkin seeds 1 cup wheat germ 1 tablespoon cinnamon (optional) ½ cup shredded sweet coconut ½-1 cup brown sugar 1 ½ teaspoons salt 1 ½ cups cold water 1 tablespoon vanilla ⅓ cup vegetable oil ¾ teaspoon salt 1 cup raisins or dried cranberries 1 cup chopped pecans
Directions
Mix all dry ingredients, excluding the nuts. Mix wet ingredients in a separate container with a whisk until well mixed. Add wet mixture to dry mixture ½ cup at a time until dry and wet are well mixed. Spread evenly over a cookie sheet and bake at 275-300° F for an hour, using a fork to break into pieces. Remove pan from the oven and break up/turn over the granola into desired size of pieces. Return to the oven and bake for another 45 minutes or until it is dry and lightly toasted. Add nuts the last 30 minutes of cooking. Add dried fruit after baking.
