Celery Soup

Ingredients

  • 2 tbsp olive oil or butter
  • 1 onion
  • 4 garlic cloves
  • 6 c celery
  • 2 c potatoes
  • 4 c stock
  • 1 c water
  • 1 bay leaf
  • 1 tsp salt
  • 0.5 tsp pepper
  • 0.125 tsp cayenne pepper (optional)
  • 0.25 c fresh dill (optional)
  • 0.5 c fresh parsley (optional)
  • 0.5 c sour cream or yoghurt

Directions

  • Dice onion.
  • Slice celery thinly.
  • Dice potatoes into chunks.
  • Roughly chop or mince garlic.
  • Add onion to heated oil in pot, stir until golden.
  • Add garlic, cook 1-2 min until fragrant.
  • Add celery, potatoes, broth, water, bay leaf, salt, pepper, and cayenne.
  • Cover, bring to boil, then simmer 10 min until potatoes are tender.
  • Remove bay leaf, add herbs.
  • Blend until smooth.
  • Add sour cream or yoghurt over low heat.
