Caprese Panini with Balsamic Glaze

Ingredients

  • 4 slices whole wheat bread
  • 4 teaspoons balsamic glaze
  • 6 thick slices fresh mozzarella
  • 1 tomato, sliced
  • 8 fresh basil leaves, sliced
  • 2 tablespoon olive oil
  • salt and pepper, to taste

Directions

  • Drizzle half the balsamic glaze evenly on one slice of bread.
  • Add the mozzarella, tomatoes, and basil.
  • Drizzle with the olive oil, the rest of the glaze, and season with salt and pepper.
  • Add second slice of bread and grill on panini grill or grill pan on the stove.
  • Slice each sandwich in half and serve.
  • Notes:
  • Balsamic glaze is a reduced version of balsamic vinegar. You can make your own by boiling balsamic vinegar until it reduces to a syrup, or you can get a store-bought version.
