Caprese Panini with Balsamic Glaze

Ingredients
- 4 slices whole wheat bread
- 4 teaspoons balsamic glaze
- 6 thick slices fresh mozzarella
- 1 tomato, sliced
- 8 fresh basil leaves, sliced
- 2 tablespoon olive oil
- salt and pepper, to taste
Directions
- Drizzle half the balsamic glaze evenly on one slice of bread.
- Add the mozzarella, tomatoes, and basil.
- Drizzle with the olive oil, the rest of the glaze, and season with salt and pepper.
- Add second slice of bread and grill on panini grill or grill pan on the stove.
- Slice each sandwich in half and serve.
- Notes:
- Balsamic glaze is a reduced version of balsamic vinegar. You can make your own by boiling balsamic vinegar until it reduces to a syrup, or you can get a store-bought version.
