Aunt MJ's Minestrone Soup

Prep: 15 minutes Cook: 6 hours Servings: 8-10

Ingredients

1 ½ pounds bulk hot Italian sausage 1 large can tomato puree 2 small cans tomato sauce 1 quart water 1 can beef broth 2 stalks celery, diced 2 carrots, sliced 2 onions, diced 1 or 2 cloves garlic, minced 1 teaspoon oregano 1 teaspoon basil 1 tablespoon parsley flakes or fresh Salt and pepper to taste 1 cup frozen green beans, cut 1 can kidney beans, drained 1 cup any kind of pasta, uncooked

Directions

Cook sausage and drain oil; Set aside. Saute celery, carrots, onions and garlic a large pot for 3-4 minutes. Add remaining ingredients to the pot and simmer for about 6 hours. Add cut green beans, kidney beans and noodles. Cook until noodles are cooked al dente.
